Pumpkin Spice Overnight Oats

Ingredients:

  • 1 cup regular rolled oats

  • Pinch of salt

  • 4 tablespoons canned pumpkin

  • 1/2 teaspoon pumpkin pie spice

  • 1-3/4 cup toasted coconut milk (I like Califia farms brand)

  • Blueberries or blackberries for serving

  • Chopped walnuts for serving

  • Cacao nibs for serving (optional)

  • Drizzle of honey for serving (optional)

Instructions:

Stir together all ingredients, cover, and refrigerate overnight. In the morning, warm up the oatmeal in the microwave and top it with berries and nuts—add cacao nibs if you want to get really fancy.

I like it without honey—but it’s always an option to drizzle some on!

Also, if you prefer to use dairy milk, that works too. I'd just probably add the honey in that case to replace the natural sweetness of the coconut milk.
