Strawberry Rhubarb Popsicles

My son declared these the best popsicles ever. Just sayin’!

Ingredients:

  • 2 stalks rhubarb, washed, chopped

  • 2 cups strawberries (fresh or frozen)

  • 1 cup coconut water

  • 2 T honey

If you want to get fancy and you like things with a kick, try substituting chili-infused honey!

Directions:

Simmer the rhubarb in the coconut water and honey until it is cooked down and tender. Add the strawberries and continue to simmer for another 3-4 minutes. Let cool. Put it all in a blender, pureé, and then pour the mixture into your popsicle molds (makes about 8 popsicles).
