Beet Hummus

I simply cannot get enough of this simple beet hummus recipe. It's not only yummy but beautiful and COLORFUL too.

Bonus: adding color to your plate is one of my favorite gentle nutrition tips!

Here's the recipe:

Ingredients:

1 can of chickpeas, rinsed and drained
5 pre-cooked beets**
¼ cup lemon juice
¼ cup olive oil
¼ cup tahini, well-stirred
½ teaspoon sea salt
2 medium cloves of garlic
Black pepper to taste

Instructions:

Combine all ingredients in a food processor and puree until smooth. Serve with raw veggies, pita chips or crackers, falafel, or use in wraps and sandwiches.

**Pro tip: I buy the beets already cooked to save time and use the leftovers in salads, sandwiches, and other dishes.
